Gone are the days of the 4 component dinner. If you have mixed vegetables and/or ground meat, you have a blank slate for dinner. It also would have been great with pasta, or topped with melted cheese. I’m here to encourage all of you not to be scared to combine ingredients without a recipe! If I didn’t have the tater tots, I still would have eaten this skillet of meat and vegetables as is, or cracked an egg on top.Ī cliche as it sounds, when in doubt, put an egg on it. I now consider myself an expert at cooking random stuff I have laying around. I had carrots, zucchini, cherry tomatoes, and asparagus, but you can definitely give it a spin with (fresh, frozen or canned) green beans, corn, celery, mushrooms, root vegetables, squash, etc. I figured why not try to make a shepherds pie out of this, and the result was delicious! Recently I found myself with a lot of miscellaneous vegetables and a bag of frozen tater tots on hand. What I learned this time around, is that you can even replace the classic mashed potato topping with tater tots! Most vegetables will work in a shepherds pie, and you can use ground beef, turkey, or even lentils if you want to go vegetarian. You can completely customize it based on what you have in on hand. When you top something with potatoes, it’s pretty easy to love in my opinion.īeyond the carbs, what I really love about shepherds pie is that it is the ultimate clean-out-your-fridge meal. It is definitely one of our favorite meals. Shepherd’s pie is basically just a casserole topped with potatoes. Tater tot casserole with veggies is a complete meal in a pan! My favorite clean-out-the-fridge recipe, and a total crowd pleaser.
